A little backstory

Brisket is a tough, cheap cut from the cow's chest, and turning it into something worth eating is a problem cooks have solved in a few different places. In Central Texas, the story usually credits Czech and German immigrant butchers who smoked the unsold cuts to sell from their meat markets. There's a separate Jewish tradition of braising the same cut slow for holidays, which is closer to what this oven method does than open-pit smoke.

Brisket is the king of BBQ. Low and slow is the only way. This oven method delivers smoky, tender, fall-apart beef with a sticky glaze. No smoker? No problem. Your kitchen can do this.

Preheat & Season

Preheat oven to 300°F (150°C). Mix dry rub ingredients. Rub all over brisket.

Sear

Heat oil in a Dutch oven or large oven-safe pot over high heat. Sear brisket 3-4 minutes per side until browned.

Slow Cook

Pour beef broth around the brisket (not over the top — keeps rub intact).

Bake 3½ to 4 hours until fork-tender.

Make Glaze

Mix BBQ sauce, vinegar, and Worcestershire sauce.

Remove brisket. Brush generously with glaze. Return to oven uncovered for 15-20 minutes until sticky.

How do I know when the brisket is done?

Go by feel, not the clock. After 3.5 to 4 hours at 300°F a fork should slide in and twist with almost no resistance. If it still grips, give it another 30 minutes covered.

Why was my brisket tough and dry?

Usually it came out of the oven too early, since brisket gets tender well past the point most cuts would be overcooked. Slicing with the grain instead of against it also makes it chew tough no matter how well it cooked.

Can I make it ahead?

Yes, and it's arguably better the next day. Cook through the slow-bake stage, cool, and refrigerate whole in its juices; reheat gently, then do the glaze-and-finish step right before serving so the crust stays sticky.

Do I really need to rest it before slicing?

Give it the full 15 minutes. Cutting straight away lets the juices run out onto the board, and you lose the moisture you spent four hours building.

What does slicing against the grain actually mean here?

Look at the direction the muscle fibers run, then cut across them at a 90-degree angle so each slice has short fibers. On a brisket the grain can shift partway along, so turn the meat as needed rather than cutting the whole thing one way.
