Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with liners.

In a large bowl, whisk cornmeal, flour, sugar, baking powder, and salt.

Mix Wet

In a separate bowl, whisk buttermilk, eggs, oil, and honey (if using).

Combine & Bake

Pour wet into dry. Stir until just combined (don’t overmix — lumps are fine). Divide batter evenly among muffin cups (fill about ¾ full).

Bake 12-15 minutes until golden brown and a toothpick comes out clean.
