Fold the blueberries in with a few last strokes and stop the second the batter holds them. It stays lumpy and thick, almost a paste, and that's what you want for fritters that hold their shape in the oil. Frozen berries actually behave better here since they don't smear, so leave them frozen and work fast. Keep the oil at 350F and drop quarter-cup portions, flattening each one a little so the center cooks before the outside goes too dark.

Blueberry fritters are everything a donut wants to be. Crispy, golden outside. Soft, fluffy inside. Bursting with juicy blueberries and lemon zest. Drizzle with glaze. Eat warm. Lose your mind.

Make Batter

Whisk flour, sugar, baking powder, salt, and cinnamon. In another bowl, whisk eggs, milk, melted butter, vanilla, and lemon zest.

Pour wet into dry. Stir until just combined (don’t overmix). Gently fold in blueberries.

Heat Oil

Heat 2 inches of oil to 350°F (175°C).

Fry Fritters

Using a cookie scoop or two spoons, drop ¼-cup portions of batter into hot oil. Flatten slightly with the back of a spoon.

Fry 2-3 minutes per side until deep golden brown and cooked through.

Drain on paper towels.

Glaze (Optional)

Whisk powdered sugar and milk/lemon juice until smooth. Drizzle over warm fritters.

Or roll in cinnamon sugar immediately after frying.

Serve

Serve warm. Watch them disappear.

Why are my fritters raw in the middle but dark outside?

Your oil is too hot or the portions are too thick. Hold it at 350F, flatten each scoop, and give them the full 2 to 3 minutes a side. A thermometer is worth it here.

Can I make the batter ahead?

I'd mix it within an hour of frying. The baking powder starts working once it's wet, so a batter that sits too long fries up flat and dense. You can measure the dry mix the night before.

Glaze or cinnamon sugar?

Cinnamon sugar has to go on the second they come out of the oil so it sticks to the surface oil. The powdered-sugar glaze wants the fritters warm but not hot, or it just slides off and pools.

How do I store leftovers?

Keep them in an airtight container at room temp for a day. They soften, so reheat in a 350F oven for about 5 minutes to bring back some crisp. Glazed ones get sticky but still taste fine.

Can I bake these instead of frying?

Not really. This batter is built for hot oil, and baked it turns into dense little muffins rather than fritters. If you want to avoid deep frying, an air fryer at 375F gets closer, though the edges won't be as crisp.
