Breakfast Sliders: Little Sandwiches, Big Energy

Pull the eggs off the heat while they still look a little wet. They'll sit under the rolls and finish cooking in the oven, so fully scrambled now means rubbery later. The rest is stacking: a layer of bacon or sausage, those soft eggs, a sheet of cheese, then the roll tops brushed with melted butter. Slicing the whole block of rolls in one go, keeping them connected, is what turns twelve sandwiches into one quick pan.

A little backstory

These belong to the sheet-pan slider craze that took over potluck and game-day tables in the 2010s, built on the squishy King's Hawaiian rolls that practically beg to be split and buttered. The breakfast version is just that same trick pointed at the morning, swapping ham-and-Swiss for eggs and bacon.

Sliders are fun. Breakfast sliders are a movement. Soft rolls, cheesy eggs, crispy breakfast meat, and a golden, buttery top. Bake them all together in one pan.

These disappear fast. Make two batches. You’ve been warned.

Step-by-Step Instructions

1

Prep the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13 baking dish.
2

Scramble the Eggs

  1. In a bowl, whisk eggs, milk, salt, and pepper.
  2. Scramble in a skillet over medium heat until just set (slightly undercooked—they’ll finish in the oven).
3

Assemble the Sliders

  1. Slice the entire block of rolls in half horizontally (keeping them connected).
  2. Place bottom half in the baking dish.
  3. Layer: cooked meat, scrambled eggs, cheese slices.
  4. Place top half of rolls on the cheese.
4

Butter and Bake

  1. Mix melted butter with garlic powder or seasoning (if using).
  2. Brush generously over the tops of the rolls.
  3. Bake for 10-15 minutes until cheese is melted and tops are golden.
5

Pull Apart and Devour

  1. Let cool for 2 minutes. Use a knife to separate sliders. Pull apart and try not to eat six of them.

Questions & Answers

Can I make these the night before?

Assemble the whole pan, cover it tight, and refrigerate overnight. Brush the butter on just before baking and add about 5 minutes since it's going in cold.

Why did my eggs turn out dry?

They got cooked twice. Scramble only until they're barely set and still glossy, because the 10 to 15 minutes in the oven finishes them.

How do I keep the bottom rolls from going soggy?

Make sure the scrambled eggs aren't sitting in liquid and that your bacon is drained. A dry pan and well-set eggs keep the bottom bread intact.

How do I store and reheat leftovers?

Wrap individual sliders and keep them in the fridge up to 3 days. Reheat in a 300°F oven or toaster oven for about 8 minutes so the bread doesn't toughen the way it can in a microwave.

Can I double this for a crowd?

Use two 9x13 dishes rather than crowding one pan. Stacking the rolls too deep keeps the centers from heating through evenly.
