Get the butter properly soft before you start, both the half cup in the dough and the half cup in the filling, because cold butter won't smear into a thin even layer and you'll end up with bald patches in the swirl. A little backstory

Babka comes out of the Jewish baking traditions of Eastern Europe, where the name is a diminutive of the Polish word for grandmother. One story is that it began as a thrifty way to use up leftover challah dough, rolled with whatever sweet filling was on hand. The buttery, heavily swirled version most of us picture now was shaped by Jewish bakeries in New York.

Step-by-Step Instructions

Make Dough

Whisk flour, sugar, yeast, and salt. Add eggs, warm milk, and softened butter. Knead 8-10 minutes until smooth and elastic.

Cover and rise 1-2 hours until doubled.

Make Filling

Mix softened butter, brown sugar, and cinnamon until smooth.

Roll & Fill

Roll dough into a 10×15 inch rectangle. Spread filling evenly over the surface.

Roll tightly from the long side into a log.

Twist & Pan

Cut the log in half lengthwise. Twist the two halves together (cut sides facing out).

Place into a greased 9×5 inch loaf pan. Cover and rise 45-60 minutes.

Bake

Preheat oven to 350°F (175°C). Bake 35-40 minutes until golden brown.

Syrup & Serve

While babka bakes, simmer sugar and water until dissolved.

Brush warm babka with syrup. Cool in pan 10 minutes, then transfer to a rack.

It's not for sweetness, it's for shelf life and shine. Brushing the warm loaf with the simmered sugar-water seals the surface and keeps it moist for a couple of days. Skip it and the babka tends to dry out by day two.

How should I store leftovers?

Wrap in foil or keep in an airtight container at room temperature for 2 to 3 days. Refrigerating dries it out. A few seconds in the microwave or a warm oven brings back the soft crumb.
