Chop Broccoli

Finely chop broccoli florets into small, rice-sized pieces (a food processor works great — pulse, don’t purée).

Mix Batter

In a bowl, combine chopped broccoli, eggs, breadcrumbs, Parmesan, mozzarella (if using), garlic, salt, pepper, and red pepper flakes. Mix until well combined. The mixture should hold together when pressed.

Heat oil in a large skillet over medium heat.

Scoop ¼ cup of mixture per fritter. Press into a patty shape. Place in skillet.

Cook 2-3 minutes per side until golden brown and crispy.

Drain on paper towels.

How do I know when they're done?

Go by color and time: 2 to 3 minutes per side over medium heat until each side is deep golden. The egg sets in that window, so if they're browning too fast and still wet inside, lower the heat.

Can I bake them instead of frying?

You can. Brush both sides with oil and bake at 400F, flipping halfway, until golden, roughly 20 to 25 minutes. They'll be less crisp than the pan version but still good.

Why are my reheated fritters soggy?

The microwave is the culprit. Steam softens the crust. Reheat in the oven or a dry skillet instead so the outside firms back up.
