Pat the fish dry before it goes anywhere near oil or batter, because surface water is what keeps a beer batter from crisping and what makes a grilled fillet steam instead of char. From there it's a fast assembly: chipotle crema whisked and chilling, cabbage tossed with lime and salt, tortillas warmed until they smell toasty. I go with grilled most weeknights and switch to the beer batter when I want the crunch. Either way the fish wants to come off the heat at large flakes, not shreds, so it holds its shape when you break it into the tortilla.

A little backstory

The Baja-style fish taco is usually traced to Ensenada and the beach towns of Mexico's Baja California, where battered, fried white fish met cabbage and a creamy sauce on a corn tortilla. The story goes that San Diego surfers carried the idea north in the 1980s, and Rubio's later put a fast-food version on the U.S. map. The grilled spin is more of a later home-cook adaptation than anything traditional.

Fish tacos are the perfect balance: crispy or grilled fish, crunchy slaw, creamy sauce, and a hit of lime. One bite and you’re at a Baja beach shack.

This version works with whatever white fish you have. Make the slaw and sauce ahead. Then cook the fish and assemble. Dinner in 20 minutes.

Step-by-Step Instructions

Make the Sauce

Whisk together sour cream, mayo, lime juice, chipotle powder, and salt. Refrigerate until ready.

Prep the Slaw and Tortillas

Toss shredded cabbage with a squeeze of lime and pinch of salt.

Warm tortillas in a dry skillet, microwave, or over a gas flame.

Cook the Fish

Grilled: Rub fish with oil, chili powder, and salt. Grill over medium-high heat for 3-4 minutes per side.

Crispy: Whisk flour, beer, and salt. Dip fish in batter. Fry in 350°F oil for 3-4 minutes until golden. Drain on paper towels.

Assemble the Tacos

Break fish into large chunks.

Layer: tortilla → slaw → fish → drizzle of crema → any toppings.

Serve With Lime

Squeeze fresh lime over everything. Eat immediately. Make more.

Grilled or beer-battered, which should I make?

Grilled is faster and lighter and great on a weeknight. Beer batter takes longer and needs a pot of oil, but you get real crunch. I keep the crema and slaw identical for both.

Why did my battered fish turn out greasy instead of crisp?

Usually the oil was too cool. Hold it at 350F and fry in small batches so the temperature doesn't crash when the fish goes in. Drain on paper towels the second it comes out.

Can I make any of this ahead?

The chipotle crema is better after a few hours and keeps three to four days in the fridge. You can shred the cabbage ahead too, but wait to toss it with lime and salt until close to serving or it goes limp. Cook the fish to order.

How do I know the fish is done?

It should flake into large pieces when you nudge it with a fork and look opaque all the way through. For grilling that's about 3 to 4 minutes a side; for frying, when the batter is deep golden, roughly 3 to 4 minutes.

What's the best way to warm the tortillas?

Straight over a gas flame for a few seconds a side gives you little char spots and the best flavor. No gas burner? A dry skillet works, or wrap a stack in a damp towel and microwave 30 seconds. Keep them covered so they stay soft.
