Medium heat and patience. Two to three minutes usually does it; the white turns opaque while the yolk still jiggles. If the whites are setting too slowly, cover the pan for the last 30 seconds to set the tops with trapped steam.

Why did my tostada crack apart when I bit into it?

That's partly the nature of a flat crisp shell. Spreading the warm beans all the way to the edges acts like glue and gives the toppings something to hold onto, which cuts down on the shattering.
