Pull the puff pastry from the freezer early so it thaws flat and pliable, because cold-stiff dough cracks the second you fold it. You're working one sheet cut into four rectangles, a layer of ham and cheese on each half, then a fold and a fork-crimp around the edges to lock it shut. Brush the tops with beaten egg, cut a small slit so steam has somewhere to go, and 15 minutes at 400 gets you golden, puffed pockets. They cool in two or three minutes, which is the hardest part since the cheese inside is molten.

These are a homemade answer to the Lunchables crackers-ham-and-cheese tray that defined a lot of 90s lunchboxes, swapping flat crackers for warm puff pastry. The general idea borrows from the French chausson, a folded pastry pocket, though this version skips any pretense and just gets ham and cheese hot and flaky in 20 minutes.

Remember Hot Pockets? These are those, but actually good.

Step-by-Step Instructions

Prep

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unroll puff pastry on a lightly floured surface. Cut into 4 equal rectangles.

Fill

  1. On one half of each rectangle, layer ham and cheese. Add a smear of mustard if using.
  2. Fold the other half over to form a pocket. Press edges with a fork to seal.

  1. Brush tops with beaten egg. Sprinkle with seasoning if desired.
  2. Cut a small slit on top to let steam escape.
  3. Bake for 15-18 minutes until golden brown and puffed.

My pastry came out pale and soft on the bottom, not crisp. What happened?

Usually an oven that wasn't fully preheated or a crowded pan. Give it the full preheat, use parchment, and leave space between pockets so air circulates underneath.

Do I have to use the egg wash?

No, but it's what gives the tops that glossy golden color. Milk or melted butter is a fine stand-in if you'd rather not crack an egg for one tablespoon of wash.

How do I keep them crisp when reheating?
