A little backstory

Patties trace back to the Cornish pasty that British colonizers brought to Jamaica, but the island made them its own with curry, allspice, and Scotch bonnet heat. The golden crust, often deepened with turmeric or curry powder, became the signature that sets a Jamaican patty apart from its pale ancestor. They're sold everywhere from street carts to bakeries across the island and its diaspora, usually eaten out of hand or tucked into coco bread.

Make the Crust

Whisk flour, turmeric, and salt. Cut in cold butter until crumbly.

Add water and vinegar. Mix until dough forms. Wrap and chill 30 minutes.

Make the Filling

Heat oil. Cook onion, garlic, ginger until soft (3 minutes).

Add ground beef. Cook until browned. Drain fat.

Add curry powder, thyme, allspice, pepper, salt, and cayenne. Cook 1 minute.

Add broth and ketchup. Simmer 5 minutes until thickened. Stir in breadcrumbs if needed. Cool.

Preheat and Roll

Preheat oven to 375°F (190°C). Line baking sheet with parchment.

Roll dough to ⅛-inch thickness. Cut into 8 circles (about 6 inches wide).

Fill and Seal

Place ¼ cup filling on one half of each circle. Fold over. Press edges with a fork.

Brush with egg wash. Cut small slits for steam.

Bake

Bake 25-30 minutes until golden brown. Serve hot.

Why did my patties leak filling while baking?

Usually the filling went in too hot or too wet, or the edges weren't sealed tight. Cool the filling fully, keep it to ¼ cup per circle, and crimp firmly with a fork all the way around.

Can I make these ahead or freeze them?

Yes. Freeze the unbaked sealed patties on a tray, then bag them for up to 3 months and bake straight from frozen at 375°F for 30 to 35 minutes. Baked ones keep 3 to 4 days in the fridge and reheat well in the oven.

How spicy are they, and can I dial the heat up or down?

As written they're mild-to-medium since the cayenne is optional. Leave it out for kids, or add a little minced Scotch bonnet to the filling if you want the real island burn.

My crust came out tough instead of flaky. What happened?

The butter probably got too warm or the dough was overworked. Use cold cubed butter, stop mixing as soon as it comes together, and give it the full 30-minute chill before rolling.

Do I really need the slits on top?

Yes, the small slits let steam escape so the patties don't puff and split at the seam. Two or three short cuts per patty is plenty.
