Mini Pizzas (Bite-Sized Pizza Night Perfection)

Mini Pizzas (Bite-Sized Pizza Night Perfection)

Split your English muffins by hand instead of slicing them, dragging a fork around the seam so you get those craggy nooks that crisp up under the broiler heat. From there it's a tablespoon of sauce per half, mozzarella and a little Parmesan, and ten minutes at 400. I keep the sauce thin so the muffin toasts instead of going soggy underneath. These come out of the oven in the time it takes to set the table.

A little backstory

The English muffin pizza is a thrifty American invention, the kind of thing that showed up in home-cook columns and kid-friendly cookbooks once packaged muffins and jarred sauce were on every shelf. The story usually credits 1960s and 70s after-school snack culture, when a toaster oven and whatever was in the fridge counted as dinner. It stuck around because it works.

Mini pizzas are the ultimate fast dinner. Crispy crust. Sauce. Cheese. Pepperoni. 10 minutes. No dough-rolling required. Make your own. Eat six. No judgment.

Makes 8 mini pizzas.

Questions & Answers

How do I keep the muffins from going soggy?

Use a thin layer of sauce, about a tablespoon per half, and put the cheese right on top so it shields the bread. Toasting the split muffins for two minutes before saucing helps if your sauce runs wet.

Can I make these ahead?

Assemble them unbaked, cover, and refrigerate for a few hours, then bake straight from the fridge with a minute or two added. Baked ones keep in the fridge up to 3 days and reheat at 375 for 5 to 7 minutes.

Can I freeze them?

Yes. Freeze the baked pizzas for up to 3 months. Reheat from frozen in a 375 oven until the cheese is hot and bubbling again, roughly 12 to 15 minutes.

How do I know they're done?

The cheese should be fully melted and bubbling and the muffin edges golden brown, usually 8 to 10 minutes at 400. If the cheese is melted but pale, a minute under the broiler browns the top.

Can I use a toaster oven?

They're ideal for it. Same 400 degrees, same 8 to 10 minutes, just watch the edges since toaster ovens run the heat closer to the food and can brown faster.
