Prep Pulled Pork

In a bowl, toss pulled pork with BBQ sauce until well coated.

Assemble

Lay tortillas flat. On one half of each, sprinkle cheese, pulled pork, and caramelized onions (if using). Top with more cheese. Fold the empty half over.

Cook

Heat oil or butter in a large skillet over medium heat. Add quesadillas (in batches if needed). Cook 2-3 minutes per side until golden brown and crispy and cheese is melted.

Serve

Cut into wedges. Serve hot with salsa, sour cream, guacamole, and cilantro. Smoky, cheesy, 10-minute perfection.
